This year, we raised our our own chicks for laying hens that will start producing around April for the kick off of the first spring tailgate markets. Our egg layers are a cross between New Hampshire and Rhode Island Reds and the breed is called Golden Comet or Red Sex Link. Their gentle temperament and good egg laying capability make them the breed of choice for our farm.
We kept back 100 of last years laying hens to be able to supply our customers eggs. Every day, Autumn and Madison, our girls, or the interns gather the eggs. The baskets of eggs are carried to the house and run through our egg room dishwasher. This dishwasher has been modified to accommodate setting a couple of baskets on the bottom shelf. We then wash them for about 20 minutes, let them air dry and they are then packed in recycled cartons.
